High-Protein Breakfast Burrito

A hearty breakfast burrito packed with protein-rich ingredients, perfect for any morning.

  • 1 large whole wheat tortilla
  • 3 large eggs
  • 1/4 cup egg whites
  • 1/2 cup cooked chicken breast, shredded
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons salsa
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a nonstick skillet over medium heat.
  2. Add the diced bell pepper and onion; cook for 3-4 minutes until softened.
  3. Stir in the shredded chicken, mixing well with the vegetables.
  4. Sprinkle in the ground cumin, chili powder, and garlic powder, cooking for an additional 2-3 minutes.
  5. In a bowl, whisk together the eggs and egg whites until well combined.
  6. Push the chicken mixture to one side of the skillet and pour the egg mixture into the other side. Let it sit for 1-2 minutes until it begins to set.
  7. Gently scramble the eggs and mix them with the chicken mixture.
  8. Stir in the black beans and top with cheddar cheese, allowing it to melt.
  9. Lay the tortilla flat, spoon fill onto the center, and drizzle with salsa.
  10. Fold in the sides and roll it up tightly.
  11. Enjoy hot, optionally served with extra salsa or avocado on the side.
