8 large eggs
1/2 cup milk
1 tbsp olive oil
12 oz turkey breakfast sausage (crumbled)
1 bell pepper (diced)
1 small onion (diced)
1 cup black beans (rinsed and drained)
1 cup shredded cheddar cheese
6 large flour tortillas (10-inch)
1 tsp garlic powder
1/2 tsp cumin
Salt and pepper to taste
Instructions
In a large mixing bowl, whisk together the eggs, milk, garlic powder, cumin, salt, and pepper until smooth.
Heat the olive oil in a large skillet over medium heat. Add the crumbled turkey sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
In the same skillet, add the diced bell pepper and onion. Sauté for about 4 minutes until softened.
Pour the egg mixture into the skillet and scramble for 3-4 minutes until just set. Remove from heat.
Stir the cooked sausage, black beans, and shredded cheese into the egg mixture until well combined.
Divide the filling evenly among the tortillas, placing it slightly off-center. Fold the sides in and roll the tortilla tightly.
Wrap each burrito in parchment paper and then in foil. Store them in the refrigerator for up to 5 days or freeze for up to a month.
To reheat, remove the foil and microwave for 1-2 minutes or bake in a 350°F oven for 15-20 minutes if frozen.
