High-Protein Breakfast Burritos

  • 1 lb lean sausage
  • 6 eggs
  • 2 cups diced potatoes
  • 1 cup cheddar cheese, shredded
  • 4 large tortillas
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp oil

Instructions

  1. Heat a drizzle of oil in a skillet over medium-high heat. Add the lean sausage and cook until it’s browned and fully cooked.
  2. Crack the eggs into a bowl and whisk them with salt and pepper. Pour this mixture into the skillet with the sausage, cooking until the eggs are fluffy.
  3. In a separate pan, heat a bit more oil and toss in the diced potatoes. Cook them until crispy and golden, about 10-15 minutes.
  4. Quickly warm the tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
  5. On each tortilla, layer some of the cooked sausage, fluffy scrambled eggs, crispy potatoes, and a sprinkle of cheddar cheese.
  6. Tightly roll each tortilla into a burrito shape. Toast them on each side for 2-3 minutes in the skillet until golden brown.
  7. Let the burritos cool slightly before serving or store them in airtight containers.

Notes

Serve with a side of salsa, guacamole, or sour cream. They are also great with a smoothie or fruit salad for a well-rounded breakfast.
