High Protein Carrot Cake Overnight Oats

A nutritious and delicious breakfast that combines the flavors of carrot cake with the convenience of overnight oats, perfect for busy mornings.

  • 1 cup rolled oats
  • 1 cup milk or milk alternative
  • 1 scoop protein powder (vanilla or unflavored)
  • 1/2 cup shredded carrots
  • 1/4 cup Greek yogurt (optional for creaminess)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup raisins or chopped walnuts (optional)
  • Toppings: chopped pecans, shredded coconut, or more raisins

Instructions

  1. Combine the rolled oats, milk, protein powder, shredded carrots, Greek yogurt, maple syrup, cinnamon, and nutmeg in a bowl or jar.
  2. Stir everything thoroughly until well mixed.
  3. If you’re using raisins or walnuts, gently fold them into the mixture.
  4. Cover your jar or bowl and refrigerate overnight or for at least 4 hours.
  5. In the morning, stir the mixture again. If it appears too thick, add more milk to your desired consistency.
  6. Serve your overnight oats topped with chopped pecans, shredded coconut, or any other toppings you’d like.

Notes

Ensure oats are fully saturated before refrigerating. You can adjust sweetness to taste and add toppings like nut butter for extra flavor.
