High-Protein Chicken & Hash Brown Breakfast Burritos

A quick, filling breakfast burrito loaded with crispy hash browns, fluffy scrambled eggs, and tender chicken.

  • 4 large flour tortillas
  • 2 cups cooked, diced chicken
  • 4 large eggs
  • 2 cups frozen hash browns
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional toppings: salsa, avocado, sour cream

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the frozen hash browns, seasoning them with salt and pepper. Cook until golden and crispy, about 5-7 minutes.
  3. While the hash browns are cooking, beat the eggs in a bowl with a pinch of salt and pepper. Pour into a separate pan and scramble until fully cooked.
  4. On each tortilla, layer the crispy hash browns, scrambled eggs, diced chicken, and shredded cheese.
  5. Roll each tortilla into burritos, tucking in the ends to secure the filling.
  6. If desired, grill the burritos in a skillet for about a minute on each side for added crispiness.
  7. Serve warm, or wrap in foil and freeze for quick meals later.

Notes

For fluffier scrambled eggs, whisk in a splash of milk or cream. Tightly wrap burritos if freezing to maintain quality.
