High Protein Cinnamon Crepes

  • 1 cup milk (dairy or plant-based)
  • 2 eggs
  • 2 tablespoons protein powder
  • 1 teaspoon cinnamon
  • 1 tablespoon sweetener (optional)
  • Butter or oil for cooking

Instructions

  1. In a mixing bowl, whisk together the almond flour, milk, eggs, protein powder, cinnamon, and sweetener (if using) until the batter is smooth.
  2. Preheat a non-stick skillet over medium heat and add a light coating of butter or oil.
  3. Pour a small amount of the batter into the skillet, swirling it around to create a thin layer.
  4. Cook for about 1-2 minutes, or until the edges lift and the bottom turns golden brown.
  5. Carefully flip the crepe and cook for another 1-2 minutes on the other side.
  6. Continue with the remaining batter, adjusting the heat as needed to avoid burning.
  7. Plate the warm crepes and top them with your favorites like fresh fruit, yogurt, or honey.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet for best texture.
