High-Protein Cottage Cheese Biscuits

Delightful high-protein biscuits made with cottage cheese and sharp cheddar, perfect for breakfast or as a side dish.

  • 1 cup all-purpose flour
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons fresh chives, chopped
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup unsalted butter, melted
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cottage cheese, flour, grated cheddar cheese, chopped chives, baking powder, salt, and pepper. Mix thoroughly.
  3. In another bowl, whisk together the melted butter and the egg until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Drop generous spoonfuls of the biscuit mixture onto a baking sheet lined with parchment paper, spacing them evenly.
  6. Bake in the preheated oven for 15 to 20 minutes, or until the tops are golden brown.
