High-Protein Cottage Cheese Blueberry Muffins

Delicious and nutritious muffins packed with protein from cottage cheese and sweetened with blueberries, perfect for breakfast or snacks.

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup sugar (or sweetener of choice)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it.
  2. Combine the cottage cheese, eggs, milk, and vanilla extract in a large bowl. Mix them smoothly until well blended.
  3. Whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt in a separate bowl.
  4. Fold the dry ingredients into the wet mixture gradually, being careful not to overmix.
  5. Gently fold in the blueberries, ensuring they’re evenly spread throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with butter, honey, or Greek yogurt. Great paired with coffee or tea.
