High Protein Cottage Cheese Breakfast Muffins

  • 2 cups oats
  • 2 eggs
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: berries or nuts for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin well to prevent sticking.
  2. Combine the cottage cheese, oats, eggs, milk, honey or maple syrup, vanilla extract, baking powder, and salt in a large mixing bowl. Stir until the mixture is well combined.
  3. Fold in any optional ingredients like berries or nuts, ensuring they’re evenly distributed.
  4. Pour the batter into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the muffins to cool in the tin for a few minutes before transferring them to a cooling rack.

Notes

For extra fluffiness, let the batter sit for 10-15 minutes before pouring it into the muffin tin. Store in an airtight container for up to three days or freeze for longer storage.
