High-Protein Cottage Cheese Egg Bake

A delightful and nutritious egg bake packed with protein, perfect for busy mornings or brunch with friends.

  • 12 large eggs
  • 16 ounces full-fat cottage cheese
  • 1 large red bell pepper – diced
  • 1/2 cup diced yellow onion
  • 4 cups chopped spinach
  • 1/4 cup shredded gruyere or gouda cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 9×13 baking pan with cooking spray.
  3. Layer the diced bell pepper, onion, and spinach at the bottom of the baking dish.
  4. Crack the eggs into a mixing bowl and whisk them until well blended.
  5. Add cottage cheese, garlic, Italian seasoning, kosher salt, black pepper, and 1/4 cup of shredded gouda cheese to the bowl and mix well.
  6. Pour the egg mixture over the vegetables in the baking dish.
  7. Top with the remaining 1/4 cup of shredded cheddar cheese.
  8. Bake for about 50-55 minutes, until the center is set.
  9. Let cool for 15 minutes before slicing and serving.
