High Protein Cottage Cheese Egg Bites

Delicious, protein-packed bites that are easy to make and perfect for meal prep.

  • 6 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup chopped veggies (spinach, bell peppers, or tomatoes)
  • Salt and pepper to taste
  • Optional: herbs or spices (like garlic powder or paprika)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the shredded cheese, chopped veggies, salt, pepper, and any optional herbs or spices.
  4. Grease a muffin tin and pour the mixture evenly into each cup.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  6. Let them cool slightly before removing from the tin. Enjoy warm or store in the fridge for meal prep!
