High-Protein Cottage Cheese Egg Bites

Delicious and nutritious egg bites packed with protein, perfect for quick meals or snacks.

  • 1 cup cottage cheese (2% or full fat)
  • 6 large eggs
  • 1/4 cup milk (any type)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/4 cup chopped spinach (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup standard muffin tin or a silicone mold.
  2. Combine the cottage cheese, eggs, and milk in a blender. Blend until completely smooth, about 30 seconds.
  3. Stir in the salt and pepper for seasoning.
  4. Pour the blended mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Top each cup with shredded cheese, crumbled bacon, and, if using, chopped spinach.
  6. Bake for 18 to 22 minutes, or until the egg bites are set. Check doneness by inserting a toothpick; if it comes out clean, they’re done.
  7. Let the egg bites cool in the tin for 5 minutes before carefully removing them.
  8. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.

Notes

Best enjoyed fresh, but can be stored and reheated. Customize with various veggies or proteins to suit your taste.
