High-Protein Egg Bites

Delicious and nutritious egg bites packed with protein, perfect for a quick breakfast, snack, or light lunch.

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers or spinach)
  • 1/2 cup cooked turkey bacon, chopped (optional)
  • 1 tablespoon chopped fresh chives (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a silicone muffin tray.
  2. Whisk together the eggs and milk in a large bowl until smooth.
  3. Stir in the shredded cheese, diced vegetables, chopped turkey bacon (if using), chives, and season with salt and pepper.
  4. Pour the mixture evenly into the muffin tray cavities, filling them about three-quarters full.
  5. Bake in the preheated oven for 18-20 minutes, or until fully set and lightly golden.
  6. Allow to cool slightly in the tray before removing. Serve warm or cool completely for meal prep.

Notes

These egg bites can be customized with your favorite veggies and cheese. Store in an airtight container for up to 4 days, or freeze for up to 2 months.
