These High-Protein Egg White Bites are perfect for a quick breakfast or light snack, offering a nutritious punch without sacrificing flavor.

  • 1/2 cup cottage cheese
  • 1/2 cup chopped vegetables (bell peppers, spinach, etc.)
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk the egg whites and cottage cheese in a mixing bowl until smooth.
  3. Stir in the chopped vegetables and shredded cheese, if using.
  4. Season with salt and pepper to taste.
  5. Grease a muffin tin with cooking spray or oil.
  6. Pour the egg mixture evenly into the muffin cups, filling them about three-quarters full.
  7. Bake for 20-25 minutes or until set and lightly golden on top.
  8. Allow to cool slightly before removing from the tin. Enjoy warm or refrigerate for later!
