High Protein Egg White Bites

Nutritious and easy-to-make egg white bites packed with high-quality protein, perfect for breakfast or snacks.

  • 2 cups liquid egg whites (or whites from about 10 large eggs)
  • 1/4 cup low-fat cottage cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped spinach
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup shredded reduced-fat cheddar cheese
  • Nonstick spray or olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with nonstick spray or olive oil.
  2. Combine the egg whites, cottage cheese, garlic powder, salt, and black pepper in a mixing bowl. Blend until smooth and slightly frothy.
  3. Stir in the chopped spinach, diced bell pepper, red onion, and shredded cheddar cheese until well combined.
  4. Pour the mixture evenly into the muffin cups, filling each about 3/4 full.
  5. Bake for 18 to 22 minutes, or until the centers are set and the tops are lightly golden brown.
  6. Allow the bites to cool for about 5 minutes before gently removing them from the pan. Serve warm or refrigerate for meal prep.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days, or freeze for up to 2 months.
