High Protein Egg White Bites

Delightful bite-sized egg white bites packed with protein, perfect for any time of day.

Ingredients

  • 1 cup egg whites (fresh or carton)
  • 1/2 cup diced bell peppers
  • 1/2 cup spinach, chopped
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the egg whites, diced bell peppers, chopped spinach, and shredded cheese in a mixing bowl.
  3. Season the mixture with salt and pepper to taste, ensuring everything is well mixed.
  4. Grease a muffin tin or opt for silicone muffin cups to prevent sticking.
  5. Pour the egg white mixture evenly into the muffin tins, filling each cup about three-quarters full.
  6. Bake for 15-20 minutes, or until the egg bites are set and slightly golden on top.
  7. Remove from the oven and let them cool for a few minutes before gently removing them from the tins.

Notes

Allow to cool completely before storing in an airtight container in the fridge.
