High-Protein Greek Yogurt Waffles

Delicious and fluffy high-protein waffles made with Greek yogurt and protein powder, perfect for any breakfast.

  • 1 1/2 cups whole wheat flour
  • 1 scoop vanilla protein powder (30g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup plain Greek yogurt (2% or whole milk)
  • 2 large eggs
  • 1/4 cup milk (any kind)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat your waffle iron to medium-high heat.
  2. In a large bowl, whisk together whole wheat flour, protein powder, baking powder, baking soda, and salt until mixed well.
  3. In a separate bowl, combine Greek yogurt, eggs, milk, honey (or maple syrup), and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; lumps are okay.
  5. Fold in melted coconut oil until blended.
  6. Lightly grease your waffle iron; use about 1/3 cup batter for each waffle.
  7. Cook for approximately 3-4 minutes, until waffles are golden brown and crisp.
  8. Serve immediately, topped with fresh berries and maple syrup.

Notes

For added flavor, experiment with different types of flour or mix in cinnamon or cocoa powder.
