High-Protein Loaded Breakfast Burritos

Delicious breakfast burritos packed with protein and wholesome ingredients, perfect for family breakfasts or meal-prepping.

  • 2 kg diced potatoes
  • 2 tsp olive oil
  • 2 tsp salt
  • 2 tsp Italian herbs
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 3 tsp smoked paprika
  • 3 kg lean beef mince
  • 2 onions, finely chopped
  • 8 garlic cloves, minced
  • 200 ml Worcestershire sauce
  • 160 g garlic herb tomato paste
  • Juice of 2 limes
  • 2 tsp chipotle powder
  • 30 eggs
  • 600 g egg whites (optional)
  • 200 g blended cottage cheese
  • Salt and pepper to taste
  • 20 large low-carb tortillas
  • 500 g light shredded cheese
  • 1 cup chopped spinach or kale
  • 50 g sriracha mayo per burrito (or 500 g light mayo + 20 g sriracha)

Instructions

  1. Preheat your oven to 425°F (220°C). In a large bowl, toss the diced potatoes with olive oil and your chosen spices: salt, Italian herbs, onion powder, garlic powder, chili powder, and smoked paprika. Spread them on a baking sheet and roast for 25-30 minutes, shaking halfway through to ensure even cooking.
  2. Brown the lean beef with the chopped onions and minced garlic over medium-high heat in a large skillet. Stir in the Worcestershire sauce, garlic herb tomato paste, lime juice, and chipotle powder. Allow it to simmer until thickened for about 5-10 minutes.
  3. Scramble the eggs, incorporating egg whites and blended cottage cheese if using. Season with salt and pepper, then cook in a nonstick skillet until fluffy.
  4. Assemble the burritos by laying a tortilla flat and filling it with a spoonful of roasted potatoes, a generous serving of the beef mixture, scrambled eggs, shredded cheese, chopped greens, and a drizzle of sriracha mayo. Roll it up tightly.
  5. Serve immediately, or if meal-prepping, wrap individual burritos in foil and freeze them for later.

Notes

These burritos are best enjoyed fresh, but they reheat well. You can adjust spices or switch out veggies based on your personal preference.
