High Protein Mac and Cheese

Indulge in a comfort food classic that’s nutritious and filling, made with high-protein pasta and a creamy cheese sauce.

Ingredients

  • 2 tbsp butter
  • 1/2 cup cream or milk of choice (dairy or plant-based)
  • 2 cups shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • Salt and pepper to taste
  • 8 oz chickpea or lentil-based high-protein pasta

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Melt the butter in the same pot used for the pasta over medium heat.
  3. Whisk in the cream or milk gradually until smooth.
  4. Stir in the shredded cheddar cheese until melted.
  5. Mix in the Greek yogurt, combining well. Season with salt and pepper to taste.
  6. Add the cooked pasta, stirring to coat it evenly with the sauce.
  7. Serve hot as a main dish or side.
