High Protein McGriddle Bites

Delicious, high-protein breakfast bites inspired by the classic McGriddle, perfect for a quick and satisfying meal.

Ingredients

  • 1 lb Breakfast sausage
  • 1 cup Cheddar cheese, grated
  • 1/4 cup Maple syrup
  • 1 cup Kodiak pancake mix
  • 2 large Eggs
  • 1/2 cup Milk

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a muffin tin.
  2. Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked.
  3. Combine Kodiak pancake mix, eggs, and milk in a mixing bowl and mix until smooth.
  4. Stir in the cooked sausage, grated cheddar cheese, and maple syrup until well mixed.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, until the tops are golden brown and a toothpick comes out clean.
  7. Cool for a few minutes before removing from the tin and enjoy!

Notes

Feel free to substitute breakfast sausage with turkey sausage or veggie sausage for a lighter option.
