High Protein McGriddle Bites

Delicious and nutritious mini muffin bites inspired by classic McGriddle flavors, packed with protein for a satisfying breakfast or snack.

  • 2 cups high-protein pancake mix (Kodiak or similar)
  • 1 cup fully cooked breakfast sausage crumbles (turkey or pork)
  • 1/2 cup egg whites
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup pure maple syrup
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sugar-free maple extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a mini-muffin tin with non-stick cooking spray.
  2. If using uncooked sausage, cook it in a skillet over medium heat until crispy and browned. Drain any excess fat.
  3. In a large bowl, whisk together the high-protein pancake mix and cinnamon.
  4. In another bowl, combine egg whites, Greek yogurt, maple syrup, almond milk, vanilla extract, and optional maple extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix. Gently fold in the cooked sausage crumbles.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake for 12 to 15 minutes, or until golden brown and a toothpick comes out clean.
  8. Allow the bites to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with maple syrup or fresh fruit. You can experiment with different types of milk or sausage alternatives to suit your taste.
