High Protein McGriddle Bites

Delicious, high-protein breakfast bites perfect for busy mornings or family brunches, with the indulgent essence of McGriddles.

  • 1 cup oatmeal
  • 1/2 cup cottage cheese
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup cooked sausage or bacon (optional)
  • 1/4 cup shredded cheese (optional)
  • Maple syrup for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin to prevent sticking.
  2. Mix the oatmeal, cottage cheese, eggs, baking powder, and salt in a large bowl until well combined.
  3. Fold in the cooked sausage or bacon and the shredded cheese (if using) for added flavor.
  4. Pour the mixture into the muffin tin cups, filling them about three-quarters full.
  5. Bake for 15-20 minutes, or until the bites are set and golden brown.
  6. Allow them to cool slightly before removing from the tin. Serve warm with maple syrup.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave for 20-30 seconds or bake at 350°F (175°C) for 10 minutes.
