Honey Cinnamon Oatmeal Bread

A delightful and wholesome loaf infused with honey and cinnamon, perfect for breakfasts or snacks.

  • 1 cup rolled oats
  • 1 cup warm milk (240 ml)
  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (60 ml)
  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Combine the rolled oats with the warm milk; let sit for about 10 minutes.
  2. Dissolve the yeast in warm water in another bowl, stir in honey, and let it bubble for 5-10 minutes.
  3. Mix softened oats with the yeast mixture and melted butter until well combined.
  4. Add in the flour, cinnamon, and salt gradually; mix until a shaggy dough forms.
  5. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  6. Transfer the dough to an oiled bowl, cover it, and let it rise until doubled in size (1 to 1.5 hours).
  7. Punch down the dough, shape it into a log, and place in a greased loaf pan; let rise again for 30-40 minutes.
  8. Preheat your oven to 375°F (190°C). Bake for 30-35 minutes, until golden brown and hollow when tapped.
  9. Cool the bread on a wire rack before slicing.

Notes

For a vegan option, substitute the milk with almond or oat milk and adjust the sweetness by reducing the honey.
