Irresistibly Easy Baked Cottage Cheese Eggs

  • 1 cup cottage cheese
  • 1/4 cup milk or cream
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/4 cup fresh herbs (chopped, like parsley or chives)
  • Vegetables or cooked proteins (optional)
  • Cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease four ramekins or your preferred baking dish.
  2. In a medium bowl, crack the eggs and whisk them together.
  3. Add the cottage cheese, milk or cream, salt, black pepper, and garlic powder. Mix well until fully combined.
  4. Gently fold in the chopped fresh herbs and any optional vegetables or cooked proteins your heart desires.
  5. Divide the mixture evenly into the prepared ramekins or baking dish. If you’re using cheese, sprinkle it on top at this stage.
  6. Place in the oven to bake for 20-25 minutes, or until they turn golden and the center slightly jiggles when you gently shake the dish.
  7. Let the baked eggs cool for a few minutes before serving to enhance the flavors.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through.
