Lemon Chia Breakfast Cookies

Ingredients

  • 1 cup almond flour
  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 lemon, zested and juiced
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine almond flour, chia seeds, baking soda, and salt in a mixing bowl.
  3. Whisk together honey (or maple syrup), melted coconut oil, lemon juice, lemon zest, and vanilla extract in another bowl.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until a cohesive dough forms.
  5. Scoop tablespoon portions of dough onto a lined baking sheet. Flatten each scoop gently with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Cool the cookies on the baking sheet for a few minutes before transferring them to a cooling rack.

Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
