A refreshing and creamy chia pudding infused with zesty lemon for a delightful treat.

  • 1 cup almond milk (or any milk of choice)
  • 1/4 cup lemon juice
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Fresh berries for topping (optional)

Instructions

  1. In a bowl, combine the chia seeds, almond milk, lemon juice, maple syrup, and vanilla extract.
  2. Stir thoroughly until everything is blended together without clumps.
  3. Add the lemon zest and mix again until evenly distributed.
  4. Cover the bowl and refrigerate for at least 240 minutes or overnight.
  5. Serve the chilled pudding in bowls, topped with fresh berries if desired.

Notes

Stir well after adding chia seeds to prevent clumping. For a creamier texture, chill overnight.
