Loaded Breakfast Bagel Sandwich

A delicious blend of crispy bacon, fluffy scrambled eggs, creamy avocado, and fresh tomato, all nestled inside toasted bagels.

  • 4 bagels (halved)
  • 6 large eggs
  • 6 slices bacon
  • 4 slices cheddar cheese
  • 1 avocado (sliced)
  • 1 tomato (sliced)
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tbsp chives (chopped)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6–8 minutes. Transfer to a paper towel-lined plate to drain.
  2. Add butter to the same skillet and toast the bagel halves until golden brown.
  3. Whisk the eggs with milk, salt, and black pepper in a bowl until well combined.
  4. Pour the egg mixture into a buttered skillet over medium-low heat. Stir gently until soft and fluffy.
  5. Place cheddar cheese slices over the eggs and allow to melt.
  6. Layer the bottom halves of the toasted bagels with eggs, crispy bacon, sliced avocado, and fresh tomato.
  7. Sprinkle chives on top, cover with bagel tops, and serve warm.

Notes

For extra flavor, consider adding paprika or garlic powder to the eggs. Leftovers can be stored in an airtight container for up to 3 days.
