Loaded Egg Bites

A delightful blend of protein-packed ingredients, perfect for breakfast or a quick snack.

Ingredients

  • 6 large eggs
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup cooked sausage, crumbled
  • 1 cup diced potatoes, cooked
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a muffin tin with cooking spray or olive oil to prevent sticking.
  3. In a large bowl, whisk the eggs until they’re well beaten.
  4. Season the eggs with salt and pepper to taste.
  5. Add in the bacon, sausage, cooked potatoes, spinach, and shredded cheese. Stir everything together until well mixed.
  6. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until the bites are set and lightly golden on top.
  8. Let the bites cool for a moment before gently removing them from the tin.
  9. Enjoy them fresh or refrigerate for meal prep throughout the week.

Notes

These egg bites can be made in advance and stored in the fridge for up to a week. They also freeze well for up to three months.
