Marry Me Chicken is a heartwarming dish with succulent chicken cutlets in a creamy Parmesan sauce, perfect for impressing your loved ones.

  • 3 large boneless skinless chicken breasts, sliced lengthwise into thin cutlets
  • Salt and black pepper, to taste
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 garlic cloves, minced
  • ½ cup chicken stock
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • ½ teaspoon chili flakes
  • ¼ teaspoon dried thyme
  • ¼ cup sun-dried tomatoes, chopped
  • 1 tablespoon fresh basil leaves, chopped (plus more for garnish)

Instructions

  1. Pat the chicken cutlets dry with paper towels. Season both sides generously with salt and pepper.
  2. Lightly coat each cutlet with all-purpose flour, shaking off any excess.
  3. In a large skillet, heat olive oil and butter over medium-high heat until shimmering.
  4. Add the floured chicken cutlets to the skillet. Cook for 3-4 minutes per side, until golden brown and fully cooked. Remove from the skillet and set aside.
  5. Lower the heat to medium and add minced garlic. Sauté for about 30 seconds or until fragrant.
  6. Pour in chicken stock, scraping the bottom of the skillet to lift the flavorful browned bits.
  7. Stir in heavy cream, Parmesan cheese, chili flakes, and thyme. Let simmer for 2-3 minutes until slightly thickened.
  8. Add chopped sun-dried tomatoes and basil, then return the chicken to the skillet, spooning some sauce over it.
  9. Simmer for an additional 4-5 minutes to meld all the wonderful flavors.
  10. Garnish with fresh basil before serving warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for 2-3 months.
