Marry Me Chicken

A creamy, flavorful chicken dish with sun-dried tomatoes that’s perfect for family dinners or romantic date nights.

  • 4 chicken breasts, boneless and skinless
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh basil for garnish (optional)

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Add them to the hot skillet and cook until golden brown on each side, about 4-5 minutes.
  3. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the minced garlic and sauté for about a minute until it’s fragrant.
  5. Stir in the chopped sun-dried tomatoes, chicken broth, and heavy cream. Mix well.
  6. Bring the mixture to a gentle simmer. Add the grated Parmesan cheese and Italian seasoning, stirring to combine.
  7. Return the chicken to the skillet and let it simmer for 5-7 additional minutes until cooked through.
  8. Serve hot, garnished with fresh basil if desired.

Notes

For a lighter option, swap heavy cream for half and half or use a dairy-free cheese substitute if needed.
