Marry Me Chicken

A romantic dish featuring tender chicken in a creamy sauce with sun-dried tomatoes and spinach, perfect for special occasions or weeknight dinners.

  • 4 chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  3. Place the chicken in the skillet and cook for 7-8 minutes on each side until browned and cooked through.
  4. Remove the chicken and set it aside.
  5. Add minced garlic to the skillet and sauté for one minute until fragrant.
  6. Stir in the chopped sun-dried tomatoes and spinach, cooking briefly.
  7. Pour in the heavy cream and add the grated Parmesan cheese, stirring until the sauce thickens.
  8. Return the chicken to the skillet, coating it well with the sauce.
  9. Serve warm over pasta or rice for a delightful meal.

Notes

For a lighter sauce, substitute heavy cream with half and half. Fresh herbs can be used instead of Italian seasoning for added flavor.
