A delightful dish featuring tender chicken breasts in a creamy sauce with sun-dried tomatoes and fresh spinach, perfect for romantic dinners or family meals.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. Add heavy cream, chopped sun-dried tomatoes, and fresh spinach to the same skillet. Stir to combine and simmer for a few minutes.
  6. Place the chicken back into the skillet, topping it with shredded mozzarella and grated Parmesan cheese.
  7. Transfer the skillet to the oven and bake for about 20-25 minutes or until the chicken is thoroughly cooked and the cheese is bubbly.
  8. Garnish with fresh basil before serving.

Notes

For a juicier texture, you can use chicken thighs. Substitute heavy cream with a plant-based alternative for a lighter version.
