Marry Me Chicken Pasta

A comforting and special dish combining tender chicken, creamy sauce, and savory pasta that will impress your loved ones.

  • 2 large chicken breasts (boneless, skinless)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 8 oz pasta (penne or fettuccine)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 tsp red pepper flakes (optional)
  • 1/2 cup Parmesan cheese (grated)
  • 1 tsp Italian seasoning
  • 1/4 cup fresh basil (chopped)

Instructions

  1. Cook the pasta according to the package instructions. Once it’s al dente, drain it and set it aside.
  2. Season the chicken by rubbing both sides with salt, pepper, and garlic powder.
  3. Sear the chicken in a skillet with olive oil over medium heat for about 5-7 minutes on each side until golden brown and cooked through, then remove from the skillet.
  4. Sauté the minced garlic in the same skillet for about a minute until fragrant.
  5. Create the sauce by pouring in chicken broth and heavy cream, stirring in chopped sun-dried tomatoes, red pepper flakes, and Italian seasoning. Allow the mixture to simmer for about 5 minutes.
  6. Combine by stirring in grated Parmesan cheese and adding the cooked pasta, tossing until well-combined and creamy.
  7. Finish the dish by slicing the chicken and arranging it on top of the pasta, garnishing with fresh basil and extra Parmesan if desired.

Notes

To enhance the dish, serve with garlic bread and a crisp green salad. Pair with a glass of white wine like Pinot Grigio or Chardonnay.
