Marry Me Chicken in a Sun-Dried Tomato Cream Sauce

A delicious love story on a plate, featuring tender chicken in a creamy sun-dried tomato sauce that turns ordinary meals into special occasions.

Ingredients

Scale
  • 3 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • ¾ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup grated fresh parmesan cheese
  • 1 cup sun-dried tomatoes
  • Fresh basil for garnish
  • Salt and pepper to taste
  • Oregano and red pepper flakes (optional)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Once it’s hot, add the seasoned chicken and cook for about 5-7 minutes on each side until golden brown. Remove the chicken and set it aside.
  3. Toss in the minced garlic and sauté until it becomes fragrant, which should take about 30 seconds.
  4. Pour in the chicken broth to deglaze the skillet, scraping up any flavorful brown bits from the bottom.
  5. Stir in the heavy cream and the grated parmesan cheese, mixing until smooth and creamy.
  6. Add the sun-dried tomatoes along with any optional herbs like oregano or a sprinkle of red pepper flakes for a hint of spice.
  7. Return the chicken to the skillet and let it simmer for about 10-15 minutes, allowing the chicken to heat through and become coated in the luscious sauce.
  8. Garnish with fresh basil before serving, either over your favorite pasta or rice.

Notes
