McGriddle Bites

Delicious bites combining fluffy pancakes, savory sausage, and gooey cheese, perfect for breakfast or brunch.

Ingredients

  • 2 cups complete pancake mix (just add water variety)
  • 1 ½ cups cold water
  • 1 pound ground breakfast sausage (cooked and crumbled)
  • 1 cup mild or sharp cheddar cheese (shredded)
  • ¼ cup pure maple syrup
  • Non-stick cooking spray (for greasing the tin)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin with non-stick cooking spray.
  2. Brown the ground breakfast sausage in a skillet over medium-high heat, breaking it into small crumbles. Drain excess grease.
  3. Whisk together the pancake mix and cold water in a large mixing bowl until smooth.
  4. Stir in the maple syrup and shredded cheese until combined.
  5. Fold the cooked sausage into the batter gently.
  6. Spoon the mixture into the muffin cups, filling them about three-quarters full.
  7. Bake for 15-18 minutes, or until golden brown. A toothpick should come out clean when inserted.
  8. Let the bites sit for a few minutes before removing them from the tin.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven.
