McGriddle Bites

Delicious bite-sized breakfast treats combining pancakes, eggs, and sausage, perfect for busy mornings or brunch gatherings.

Ingredients

  • 1 lb breakfast sausage
  • 4 eggs
  • 2 cups pancake mix
  • 1/4 cup maple syrup
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Cooking spray

Instructions

  1. Cook the breakfast sausage in a pan over medium heat until browned, breaking it apart as you go.
  2. Combine the pancake mix with water and stir in maple syrup.
  3. Whisk the eggs in a separate bowl, seasoning with salt and pepper.
  4. Mix the fully cooked sausage with the egg mixture.
  5. Grease a muffin tin with cooking spray and pour pancake batter into each cup, filling halfway.
  6. Spoon the sausage and egg mixture on top of the batter in each cup.
  7. Add more pancake batter on top to completely cover the filling.
  8. Bake in a preheated oven at 350°F (175°C) for about 15-20 minutes or until golden brown.
  9. Cool slightly before serving.

Notes

Serve warm with additional maple syrup, fresh fruit, or crispy bacon. Store leftovers in an airtight container in the refrigerator for up to three days.
