Instructions

  1. Cook the grain: Start by cooking your quinoa or brown rice according to package instructions. Once done, set it aside.
  2. Sauté veggies: In a large skillet, drizzle olive oil over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes until softened.
  3. Add greens: Toss in the spinach and cook until wilted, stirring occasionally to incorporate.
  4. Prepare eggs: In a separate bowl, crack and whisk the eggs, seasoning with salt and pepper to taste.
  5. Scramble eggs: Pour the beaten eggs into the skillet, stirring constantly until they are fully cooked.
