Oatmeal Crepes

Delightful oatmeal crepes that are light, flexible, and nutritious, perfect for any meal of the day.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter or oil, for cooking
  • Optional toppings: fresh fruit, yogurt, nuts, chocolate chips

Instructions

  1. Blend all ingredients, except for the butter or oil, in a blender until smooth.
  2. Rest the batter for 5-10 minutes to improve texture.
  3. Heat a lightly oiled griddle over medium heat.
  4. Pour 1/4 cup of batter onto the hot surface, spreading it thinly.
  5. Cook for 2-3 minutes on each side until golden brown.
  6. Repeat the process with the remaining batter.
  7. Serve immediately with your favorite toppings!

Notes

Store leftover crepes in an airtight container in the fridge for up to 3 days or freeze with parchment paper for up to 3 months.
