One-Bowl Ham & Cheese Protein Breakfast Biscuits

Delicious protein-packed biscuits perfect for breakfast or meal prep, combining ham, cheese, and veggies into a comforting treat.

  • 1 ½ cups cottage cheese, liquid drained
  • 4 eggs
  • 2 cups spinach, finely chopped
  • 1 ½ cups shredded cheddar cheese, divided
  • ⅓ cup chives, diced
  • 2 cups ham, diced
  • 1 ½ cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Whisk together the cottage cheese and eggs until smooth.
  3. Add the finely chopped spinach, 1 cup of shredded cheddar cheese, chives, and diced ham to the bowl. Mix until well combined.
  4. Incorporate the flour, baking powder, garlic powder, onion powder, and salt. Mix gently; do not overmix.
  5. Shape the mixture into 12 equal balls and place them on the prepared baking sheet.
  6. Flatten each ball to create 1 ½-inch-thick biscuits. Place them close together on the sheet since they won’t spread much.
  7. Sprinkle the remaining cheddar cheese on top of each biscuit.
  8. Bake for 23-25 minutes, or until the biscuits are golden brown and fully cooked through.
  9. Let them cool for 5-10 minutes before serving. Enjoy them warm or toasted with butter.

Notes

These biscuits can also be frozen for up to three months. Store in an airtight container.
