Pancake Poppers

Delightful bite-sized pancake treats, perfect for brunch or snacks.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup or berries for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, whisk the milk, egg, and melted butter together until thoroughly mixed.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix!
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 12-15 minutes or until they turn golden brown. A toothpick inserted in the center should come out clean.
  7. Remove them from the oven and let them cool slightly before serving.
  8. Serve warm, drizzled with maple syrup or topped with fresh berries.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
