Power Up Protein Muffins

These nutritious protein muffins are fluffy, subtly sweet, and perfect for breakfast or a snack, packed with protein to keep you energized.

  • 1 cup all-purpose flour
  • 1/2 cup protein powder (whey or plant-based)
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin with paper liners, or grease it well.
  2. Combine the flour, protein powder, sugar, baking powder, and salt in a large bowl. Whisk until well mixed.
  3. Whisk together the Greek yogurt, milk, vegetable oil, eggs, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix.
  5. Divide the muffin batter evenly among the muffin cups, filling each about two-thirds full to allow for rising.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

These muffins can be enjoyed fresh or stored in an airtight container for up to 3 days; freeze for longer storage.
