Protein Banana Bread Muffins

Deliciously fragrant and moist, these Protein Banana Bread Muffins are a healthy breakfast alternative that pack a protein punch, perfect for on-the-go fuel.

  • 2 ripe bananas
  • 1 cup protein powder
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add in the protein powder, oats, honey or maple syrup, almond milk, baking soda, baking powder, cinnamon, and salt.
  4. Mix until everything is perfectly combined.
  5. Fold in the chopped nuts or chocolate chips if desired.
  6. Divide the batter among the muffin cups, filling them about three-quarters full.
  7. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

Store muffins in an airtight container for up to three days at room temperature, or refrigerate them for about a week. They can also be frozen for longer storage.
