Protein Cottage Cheese Blueberry Muffins

  • 1 cup cottage cheese
  • 1 cup blueberries
  • 1 cup oat flour (or gluten-free flour)
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract in a mixing bowl. Mix until smooth.
  3. Whisk together the oat flour, baking powder, baking soda, and salt in another bowl.
  4. Gradually add the dry mixture to the wet mixture and stir until just combined.
  5. Fold in the blueberries gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool, then transfer to a wire rack. Enjoy!

Notes

For a vegan option, substitute the honey with maple syrup. Ensure to use a proper measuring technique for oat flour.
