Delicious and nutritious muffins that taste just like French toast, making them perfect for busy mornings or meal prep.

  • 1 cup Greek yogurt
  • 2 cups whole grain bread (cubed)
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup honey or maple syrup (optional)
  • 1/4 cup raisins or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. In a large mixing bowl, whisk the eggs, Greek yogurt, milk, vanilla extract, and cinnamon until smooth.
  3. Add the cubed whole grain bread, ensuring each piece absorbs the mixture thoroughly.
  4. If desired, add honey or maple syrup along with any optional ingredients like raisins or nuts.
  5. Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before removing them. Enjoy them warm or store them in the fridge for easy meal prep!

Notes

For a dairy-free option, substitute Greek yogurt with a high-protein plant-based yogurt and milk with almond milk.
