Protein Muffins

These protein muffins are a delightful breakfast or snack option that are healthy and kid-approved.

Ingredients

  • 1 cup rolled oats or oat flour
  • 1 scoop protein powder (vanilla or chocolate)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt
  • 2 eggs
  • ½ cup Greek yogurt
  • ¼ cup milk (any kind)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup add-ins (chocolate chips, berries, or nuts)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare your muffin tray with liners or by greasing it.
  2. Mix together the rolled oats (or oat flour), protein powder, baking powder, baking soda, and salt in a large bowl.
  3. Whisk the eggs until fluffy in another bowl. Add Greek yogurt, milk, honey or maple syrup, and vanilla. Mix until smooth.
  4. Combine the wet mixture with the dry ingredients, stirring gently to avoid overmixing.
  5. Fold in your desired add-ins like chocolate chips, fresh berries, or nuts.
  6. Spoon the batter into the muffin cups, filling them about ¾ full.
  7. Bake for 15-20 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before serving.

Notes

Store in an airtight container at room temperature for up to three days, in the fridge for up to a week, or freeze for about three months. Reheat in the microwave for 15-20 seconds.
