Protein-Packed Breakfast Scramble

A vibrant, protein-packed breakfast featuring scrambled eggs mixed with fresh veggies, creamy avocado, and Greek yogurt, perfect for busy mornings or leisurely brunches.

  • 4 eggs
  • 1/2 cup cheese (your choice)
  • 1 cup spinach, chopped
  • 1/2 cup tomatoes, diced
  • 1/2 cup bell peppers, sliced
  • 1 avocado, sliced
  • 2 slices whole grain bread
  • 1/2 cup Greek yogurt

Instructions

  1. Whisk the eggs in a bowl until well combined. Add a pinch of salt and pepper to taste.
  2. Preheat a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and gently scramble them until fully cooked and fluffy.
  4. Toss in chopped spinach, diced tomatoes, and sliced bell peppers into the skillet. Sauté for about 3-4 minutes until tender.
  5. Fold the sautéed vegetables into the scrambled eggs until evenly mixed.
  6. Serve alongside slices of creamy avocado and whole grain bread. Top off with a dollop of Greek yogurt if desired.
