Protein-Packed Cinnamon Roll Muffins

A delightful twist on classic cinnamon rolls, these protein-packed muffins are perfect for a healthy breakfast or snack.

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/4 cup sugar or sweetener
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk or alternative
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar for swirl
  • 1 teaspoon ground cinnamon for swirl
  • Optional: cream cheese for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Whisk together the whole wheat flour, protein powder, sugar, baking powder, cinnamon, and salt in a large bowl until well mixed.
  3. Combine the milk, applesauce, egg, and vanilla extract in a separate bowl. Whisk these until smooth.
  4. Pour the wet ingredients into the dry ones. Gently stir until just combined; don’t worry about a few lumps.
  5. Mix together the brown sugar and cinnamon for the swirl in a small bowl.
  6. Spoon the batter into each muffin cup, then sprinkle the brown sugar mixture on top. Use a toothpick or knife to gently swirl it into the batter.
  7. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  8. Spread softened cream cheese over the muffins once they’ve cooled. Enjoy!

Notes

These muffins are best served warm. Consider pairing with a light fruit salad or yogurt for contrast. They also freeze well for longer storage.
