  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional: herbs or spices of your choice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the cottage cheese and eggs until smooth.
  3. Fold in the chopped spinach, diced bell pepper, onion, and shredded cheese.
  4. Season with salt, pepper, and any additional herbs or spices you prefer.
  5. Generously grease a muffin tin. Pour the mixture evenly into each cup, filling them about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes until the muffins are set with a lovely golden top.
  7. Allow them to cool slightly before gently removing them from the tin. Enjoy them warm or store for later!
