Protein Pancake Bowl

A delightful twist on traditional pancakes that packs a protein punch, perfect for any time of the day.

Ingredients

  • 1/2 cup quick oats or oat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 egg
  • 1/2 cup cottage cheese
  • 12 tbsp maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • 12 tbsp milk of choice
  • Optional: berries, chocolate chips, or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a small oven-safe baking dish.
  2. Combine all ingredients except any optional mix-ins in a blender. Blend until the mixture is completely smooth.
  3. Pour the batter into the greased dish. If you’re adding optional ingredients like berries or nuts, gently fold them in now.
  4. Bake for 20–25 minutes, until the top is a beautiful golden brown. For a crispy top, switch the oven to broil for 1–2 minutes; just keep an eye on it to prevent burning.
  5. Serve warm topped with your favorite indulgences, such as maple syrup, nut butter, or fresh fruit.

Notes

Adjust the amount of maple syrup or sweetener based on your taste. For a smoother batter, blend the cottage cheese well before adding other ingredients.
