Protein Pancakes with Greek Yogurt and Strawberries

Deliciously wholesome protein pancakes made with Greek yogurt and topped with fresh strawberries, perfect for breakfast or brunch.

Ingredients

  • 1 cup protein pancake mix (~100g)
  • 3/4 cup water or milk
  • 1/2 cup nonfat Greek yogurt
  • 1 Tbsp PBFit (mixed with water)
  • 75g fresh strawberries, sliced
  • 1-2 Tbsp maple syrup

Instructions

  1. Combine the protein pancake mix with your choice of water or milk until smooth.
  2. Heat a non-stick skillet over medium heat.
  3. Pour the pancake batter onto the skillet in your desired sizes.
  4. Cook until bubbles form on the surface; then flip and cook until golden brown.
  5. Mix PBFit with a little water to create a peanut butter sauce.
  6. Serve the pancakes topped with Greek yogurt, fresh strawberries, and a drizzle of maple syrup.

Notes

Ensure your skillet is heated properly for even cooking. Experiment with toppings like crushed nuts or chocolate chips for added flavor.
